Julie, my hubby won't eat "stuff" in his eggs either. I did make this for myself, LOL! Breakfast for the week. :) BTW I enjoyed seeing your pics of Japan! I've always wanted to go.
This looks incredible!! I wish my kids and hubby would eat tomatoes and spinach. I may have to make it just for myself.
